Healthy 3 Bean Mild and Wild Vegetarian chili
1 medium onion (chopped, and diced into small pieces)
1 (16 oz.) can chili beans, drained
1 (15 oz.) can light red kidney beans, drained
1 (15 oz.) can black beans, drained
1 jar Thick and Chunky Salsa (Taco bell or Pace, etc.)
1 (8 oz) can tomato sauce
1 (3/4 oz.) envelope chili seasoning
5 oz. hot banana pepper rings (jarred variety)
2 cloves garlic (minced)
1 tsp. sugar or other vegan sweetener
1/2 tsp. Italian seasonings
Dash of salt (to taste)
Dash of pepper (to taste)
Add all ingredients to a large stock pot.
Stir well to blend. Bring to a boil. Reduce heat and simmer for 30 - 45 minutes.
Makes 4 - 6 servings
Preparation time: Less than 10 minutes
Cooking time: Varies, 35 to 45 minutes
Serve hot, topped with Mexican style cheese, sour cream, chives or your favorite toppings.
Or, serve over a bed of warm wild rice or baked potato
