lite whipped topping |

ripe fresh California nectarines |

In 1-cup glass measuring cup, sprinkle gelatin over water. Let stand 2 minutes. Microwave on high power 40 seconds to dissolve; set aside. |

In mixing bowl beat honey and cocoa powder until smooth. Stir in 1/2 cup of the whipped topping. |

Blend enough of the nectarines to make 1 cup puree; stir into cocoa mixture. Fold in remaining 2 cups whipped topping. |

Chill until partially set, 20 to 30 minutes. |

Spoon into 6 stemmed glasses or dessert dishes. Chill. Garnish with mint. |

Serve with remaining nectarines, sliced. | |
